THE BASICS
[DI-kuhn, DI-kon] From the Japanese words dai (large) and kon (root), this vegetable is actually a large Asian radish. While the skin can be either creamy white or black, its flesh is crisp, juicy and white with a sweet, fresh flavor.

THE BASICS
Endive and chicory are cousins, both part of the same botanical family, Cichorium. What we call Belgian endive is actually comes from the chicory side. The heads are about six inches long with tightly packed, slightly bitter leaves. They are grown in complete darkness in order to affect the trademark creamy color. Curly endive grows in loose heads of lacy, green-rimmed outer leaves that curl at the tips. The off-white center leaves form a compact heart. The leaves are prickly to the touch and slightly bitter to the taste. Escarole has broad, slightly curved, pale green leaves with a milder flavor than either Belgian or curly endive.

[FEHN-uhl] There are two main types of this aromatic plant, both with pale green, celerylike stems and bright green, feathery foliage. Florence fennel, also called finocchio, is cultivated throughout the Mediterranean and in the U.S. It has a broad, bulbous base and is treated like a vegetable. Common fennel is the variety from which the oval, greenish-brown fennel seeds come.
