THE BASICS
For convenience, bags of "baby" carrots require no peeling and no cutting. For taste, so long as they're eaten raw, baby carrots are fine. Trouble is, "baby" carrots aren't young, tender carrots at all. Instead, they are machine-processed into carrot bullets from huge carrots and once cooked, yield flat, lifeless flavor. So for cooking, choose whole carrots and invest a couple of minutes to wash and trim them yourself. Peeling is optional, especially for slow-cooked stews. Watch for small just-from-the-ground carrots with their tops attached at a farmers market, even Whole Foods. They taste completely different from the commercial carrots at the supermarket. Lucky shoppers will find yellow, white, red, even purple carrots! We may have forgotten what real carrots taste like - not everyone likes these. The bigger the core of a carrot, the sweeter it will taste. Cut off carrots tops so they don't leach moisture from the carrots themselves.

Pungent chilli pods play an important role in the cuisines of Africa, China (Szechuan region), India, Mexico, South America, Spain and Thailand. There are more than 200 varieties, over 100 of which are indigenous to Mexico. They vary in length from a huge 12 inches to a 1/4-inch peewee. Cucumber
