THE BASICS
[rah-DEE-kee-oh] Radicchio is a red-leafed Italian chicory. It is most often used as a salad green, with tender but firm leaves with a bitter flavor. The radicchio di Verona has burgundy-red leaves with white ribs in a small, loose head. The leaves of radicchio di Treviso are narrow and pointed and form tighter, more tapered heads with white to pink to dark red ribs.

THE BASICS
Radishes are the roots of plants in the mustard family. Their skins vary in color (from white to red to purple to black with many shades in between) and shape (round, oval or elongated) and and size (from half-inch globes to giants like daikon). The flavor can be mild to peppery, depending on factors such as variety and age.
